Madeline Cake, Mascarpone Mousse, Lemon Curd, Lime Financier, White Chocolate with Sea Salt,White Chocolate Glaze, French Macaroons, and Chocolate Garnish. 


Tropical Entremet
Lady finger Cake, Mango sorbet, Passion Fruit Parfait, Coconut Japonaise, and Roasted Pineapple. Finished with Passion Fruit Gel, Pomegranate Seeds, Roasted Pineapple, Dark chocolate, White Chocolate Spray and Roasted Pineapple.


Mudslide Entremet and Petit Gateaux
Chocolate Flourless Cake brushed withb Kahlua, Joconde, Chocolate Mousse, Irish Cream Ganache, Rice Krispie made with Praline Chocolate Ganache. Topped with Vodka Chantilly, Dark Chocolate, and White Chocolate


Raspberry Entremet and Petit Gateaux
Lady Finger Cake, Joconde, Raspberry Bavarian Cream, Fresh Raspberries, Chocolate Mousse, Sable Breton, Raspberry Mirror Glaze, and White Chocolate and Dark Chocolate Garnishes.
